- 1 lb (454 g) ground bison - 1 tsp (5 g) kosher salt - 1/2 tsp (2 g) freshly ground black pepper - 1 tbsp (15 ml) Worcestershire sauce - 1 small shallot, finely chopped, approx. 1 oz (28 g) - 1 clove garlic, minced - 1 tbsp (15 ml) neutral oil (for grilling) - 4 hamburger buns, approx. 2.5 oz (70 g) each - 4 slices cheddar cheese, approx. 0.75 oz (20 g) per slice - 4 lettuce leaves - 1 medium tomato, sliced, approx. 6 oz (170 g) - 4 dill pickle slices per burger (or to taste) - Condiments: ketchup, mustard, mayonnaise (as desired)
1. Combine ground bison, shallot, garlic, Worcestershire, salt, and pepper gently in a bowl; form into four even patties (about 4 oz/115 g each). Chill 10–15 minutes to firm, then brush patties and grates with oil and grill or pan-sear over medium-high heat 3–5 minutes per side for medium (internal 145°F/63°C), adding cheese in the final minute to melt. 2. Toast buns briefly on the grill or pan, assemble burgers with lettuce, tomato, pickles, condiments and the cooked patties, and serve immediately.
