1. Transfer the grated potatoes and onion to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible; reserve the potato starch that settles if desired. 2. In a large bowl, combine the squeezed grated potatoes and onion with the egg, flour, salt, pepper, and chopped dill; mix until the mixture holds together when pressed. 3. Heat 2 tbsp (30 ml) vegetable oil in a large skillet over medium heat. Form the potato mixture into patties about 2.5 in (6 cm) wide and 1/2 in (1 cm) thick. 4. Fry the patties in batches, 3–4 minutes per side, until deep golden and crisp, adding more oil as needed between batches; transfer to a paper towel-lined plate to drain. 5. Serve hot with a dollop of sour cream on the side and additional fresh dill if desired.
