1. In a large pot over medium heat, melt the butter and sauté the sliced leek and chopped onion until soft and translucent, about 5–7 minutes. Add the sliced carrots and sauté 2–3 more minutes. 2. Add the diced potatoes, fish stock, and bay leaf. Bring to a gentle simmer and cook until the potatoes are tender, about 12–15 minutes. 3. Reduce heat to low and add the salmon pieces to the pot. Simmer gently until the salmon is just cooked through, about 4–6 minutes; avoid vigorous boiling to keep the fish tender. 4. Stir in the heavy cream, lemon juice, chopped dill, salt, and white pepper. Warm through for 1–2 minutes without boiling. Adjust seasoning to taste and remove the bay leaf. 5. Ladle into bowls, garnish with additional dill or parsley if desired, and serve hot with rye or dark bread.
