In a large bowl, whisk the granulated sugar, eggs, oil, vanilla, and espresso powder (if using) until smooth and slightly thick, about 1 minute. Add the dry ingredients to the wet and stir with a spatula until a thick, sticky dough forms with no dry patches. Cover and chill the dough until firm enough to scoop, 1 to 2 hours (or 30 minutes in the freezer). Preheat the oven to 350°F (175°C). Line 2 baking sheets with parchment paper. Scoop heaping tablespoon portions (about 1 ounce/30 g), roll into balls, and generously coat each in powdered sugar. Arrange 2 inches apart on the prepared sheets. Bake, one sheet at a time, until the cookies have spread, are crackled, and the edges are set but centers look slightly soft, 10 to 12 minutes. Cool on the sheet for 5 minutes, then transfer to a rack to cool completely. Store in an airtight container at room temperature for up to 4 days.
