4 filet mignon steaks (6–8 oz / 170–225 g each) 4 slices thick-cut bacon Salt to taste Freshly ground black pepper to taste 2 tbsp (30 ml) olive oil 2 tbsp (30 g) unsalted butter 2–3 sprigs fresh thyme (optional)
1. Preheat oven to 400°F (200°C). Season steaks with salt and pepper. Wrap one bacon slice around each filet and secure with a toothpick. 2. Heat olive oil in an ovenproof skillet over medium-high heat. Sear filets 2 minutes per side until browned. 3. Add butter and thyme, spoon butter over steaks for 30 seconds. Transfer skillet to oven and roast 6–8 minutes for medium-rare. 4. Remove from oven, tent with foil and rest 5 minutes. Discard toothpicks and serve.
