- 1.5 lb (680 g) conch meat, cleaned and tenderized (about 3–4 medium conches before cleaning) - 1 cup (120 g) all-purpose flour - 1/2 cup (60 g) cornstarch - 1 tsp (4 g) baking powder - 2 tsp (10 g) salt, divided - 1 tsp (2 g) freshly ground black pepper - 1 tsp (2 g) garlic powder - 1 tsp (2 g) cayenne pepper or 1 small Scotch bonnet, seeded and minced (optional, adjust to taste) - 2 large eggs, beaten (approx. 100 g) - 1/4 cup (60 ml) milk - 1 cup (100 g) fine breadcrumbs or panko - 4 cups (960 ml) vegetable oil or other neutral oil for deep frying - 2 tbsp (30 ml) fresh lime or lemon juice - Lemon or lime wedges, for serving - 2 tbsp (6 g) chopped fresh parsley, for garnish - Hot pepper sauce or tartar sauce, for serving
1. If not already tenderized, place conch pieces between sheets of plastic wrap and pound lightly with a meat mallet until about 1/4 inch (6 mm) thick; set aside. (Optional: soak tenderized conch in 1 cup (240 ml) milk for 20–30 minutes to further mellow texture, then pat dry.) 2. In a shallow bowl combine the flour, cornstarch, baking powder, 1½ tsp (7 g) salt, black pepper, garlic powder, and cayenne (or minced Scotch bonnet) to make the seasoned dredge. 3. In a second bowl whisk the eggs with the milk. Put the breadcrumbs in a third shallow bowl. Dredging order: seasoned flour, egg wash, then breadcrumbs. 4. Heat oil in a deep skillet or heavy pot to 350°F (175°C). Test with a pinch of flour — it should sizzle immediately. 5. Working in batches, dredge each conch piece in the seasoned flour (shake off excess), dip in egg wash, then coat evenly with breadcrumbs. Fry 2–3 pieces at a time until deep golden and crisp, about 2–3 minutes per side depending on thickness. Do not overcrowd the pan. 6. Transfer fried conch to a wire rack or paper towel-lined tray and season immediately with remaining 1/2 tsp (3 g) salt. Keep warm in a low oven if needed while frying remaining batches. 7. Sprinkle with fresh lime or lemon juice, garnish with chopped parsley, and serve hot with lemon/lime wedges and hot pepper sauce or tartar sauce.
