- 3 cups cooked dry white beans (fat added in cooking), approx. 18 oz (510 g) total - 3 cups (255 g) broccoli florets - 1 pint (340 g) cherry tomatoes, crushed or halved - 4 cups (120 g) spinach, packed - 1 avocado, approx. 6 oz (170 g), sliced for garnish
1. Step 1: In a saucepan over medium heat, combine the cooked beans and cherry tomatoes and simmer until tomatoes break down (about 10 minutes); smash about one-third of the beans against the side of the pan to thicken the stew, then add broccoli and simmer until tender (another 6–8 minutes). 2. Step 2: Stir in the spinach and cook just until wilted (1–2 minutes), adjust texture by mashing additional beans if desired, ladle into bowls and top each portion with sliced avocado before serving.
