Remove steaks from the skillet and let them rest. 2. In the same skillet, add butter and minced garlic. Cook the garlic until fragrant, then add the scallions. Sauté until the scallions are tender, about 2 minutes. Pour the garlic butter and scallions over the rested filet mignon before serving.
