1. Mix chili powder into the beef, then form into 8 patties; season with salt and pepper. 2. Place a piece of pepper jack and a scattering of diced jalapeño on 4 patties; top with remaining patties and seal edges tightly so no filling leaks. 3. Chill 15 minutes to firm up. 4. Cook patties on a preheated grill or skillet over medium-high heat 3–4 minutes per side until a good crust forms and internal temp reaches 160°F (71°C). 5.
