Place a slice of American cheese (folded to fit) on 4 patties, then top with the remaining 4 patties; press and crimp edges tightly to fully seal the cheese inside. 3. Chill sealed patties 15–20 minutes on a tray to help them hold together. 4. Heat a skillet or griddle over medium-high heat and lightly oil; sear patties 3–4 minutes per side until a deep crust forms and internal temperature reaches 160°F (71°C). 5.
