Ingredients

1 1 / 2 lb / 680 g lamb leg or shoulder, cut into bite-sized pieces
1 / 4 cup (60 ml) extra-virgin olive oil
2 tbsp (30 ml) red wine vinegar
1 tbsp (15 ml) fresh lemon juice
2 tsp dried oregano
2 cloves garlic, minced
Salt and pepper to taste
Whole wheat pita bread, for serving
#### Tzatziki Sauce
1 cup (240 ml) Greek yogurt
1 cucumber, grated and drained
2 cloves garlic, minced
1 tbsp (15 ml) fresh dill, chopped
Salt and pepper to taste

Instructions

1. **Prepare the Marinade**: In a large bowl, mix together the olive oil, red wine vinegar, lemon juice, oregano, minced garlic, salt, and pepper.
2. **Marinate the Lamb**: Add the lamb pieces to the marinade, ensuring they are completely covered. Cover the bowl with plastic wrap and let the lamb marinate in the refrigerator for at least 2 hours or overnight for deeper flavor.
3. **Make the Tzatziki Sauce**: In another bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, salt, and pepper. Mix well, cover, and refrigerate until ready to serve.
4. **Prepare the Skewers**: If using wooden skewers, soak them in water for 30 minutes. Thread marinated lamb pieces onto the skewers.
5. **Grill the Souvlaki**: Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning frequently, until the lamb is cooked to your desired level of doneness.
6. **Serve**: Serve the lamb souvlaki in warm pita bread with a generous dollop of tzatziki sauce. Optionally, add sliced tomatoes and red onions for extra freshness.
