1. In a large saucepan, combine the wine, water, vinegar, and shallot. Bring to a gentle simmer over medium heat. 2. Season salmon fillets with salt and pepper. Carefully place them in the simmering liquid and poach for 8-10 minutes. 3. Remove salmon and cover to keep warm. Boil the remaining liquid until reduced by half. 4. Serve salmon with the reduced wine sauce drizzled over and garnish with fresh parsley.
