- 1 lb (454 g) ground beef, formed into 4 patties, approx. 4 oz (113 g) each - 4 hamburger buns, approx. 3.5 oz (100 g) each - 2 tbsp (30 ml) unsalted butter, softened - 1 tsp (5 g) kosher salt - 1/2 tsp (1.5 g) freshly ground black pepper - 1 tbsp (15 ml) vegetable oil - 4 tsp (20 g) yellow mustard - 4 tsp (20 g) ketchup - 1 small onion, approx. 4 oz (115 g), thinly sliced - 8 dill pickle slices, approx. 1.5 oz (45 g) total - 4 leaves iceberg lettuce (optional)
1. Heat a heavy skillet or flat-top griddle over medium-high until very hot. Lightly oil the surface. Season both sides of the patties with salt and pepper. Place patties on the hot surface and sear without pressing for 2–3 minutes until a brown crust forms, flip and cook another 2–3 minutes for medium; adjust time for desired doneness. 2. Meanwhile, spread butter on cut sides of buns and toast butter-side down on the griddle until golden. Assemble: spread mustard and ketchup on buns, place patty on bottom bun, add sliced onion, pickle slices, and lettuce if using, then top bun and serve immediately.
