Ingredients

- 8 beef patties, approx. 4 oz (115 g) each (2 lb / 907 g total ground beef)
- 12 slices pastrami, approx. 9 oz (255 g) total
- 4 burger buns
- 8 slices American cheese, approx. 8 oz (225 g) total
- 1/2 cup (120 ml) mayonnaise
- 2 tbsp (30 ml) yellow mustard
- 1/2 cup (120 ml) thinly sliced white onion (about 1 small onion / 75 g)
- 12 dill pickle slices
- 2 tbsp (30 g) vegetable oil
- 1 tsp (5 g) kosher salt
- 1/2 tsp (2 g) black pepper

Instructions

1. Season ground beef with salt and pepper and form into eight thin patties, about 4 oz (115 g) each.
2. Heat a large griddle or skillet over medium-high heat with 1 tbsp (15 ml) vegetable oil. Cook patties 2–3 minutes per side until browned; stack two patties per burger, placing a slice of cheese between and on top to melt.
3. In a second skillet, quickly warm pastrami slices 1–2 minutes until hot.
4. Lightly toast buns in remaining 1 tbsp (15 ml) oil on the griddle.
5. Mix mayonnaise and mustard for a simple sauce.
6. To assemble: spread sauce on buns, place the double cheeseburger stack, top with 3 slices warmed pastrami, add onions and pickles, and serve.
