Ingredients

- 1 lb (454 g) ground beef, formed into four 4 oz (113 g) patties
- 4 slices American cheese
- 4 hamburger buns
- 1 tsp (5 g) kosher salt
- 1/2 tsp (1 g) black pepper
- 1 tbsp (15 ml) vegetable oil
- 1 tbsp (14 g) butter, softened (optional, for toasting buns)

Instructions

1. Preheat a cast-iron skillet or griddle over medium-high heat and brush with vegetable oil.
2. Lightly season both sides of each 4 oz (113 g) patty with kosher salt and black pepper; do not overwork the meat when forming patties.
3. When the skillet is hot, place patties in the pan and cook undisturbed 3–4 minutes until a brown crust forms.
4. Flip patties and cook 2–3 minutes more for medium; place a slice of American cheese on each patty during the last minute to melt.
5. Meanwhile, butter the cut sides of the hamburger buns and toast them in a separate pan or under a broiler until golden.
6. Assemble burgers by placing each cheese-topped patty on a toasted bun; serve immediately.
