Ingredients

- 1 lb (454 g) firm tofu, cut into 1-inch (2.5 cm) cubes
- 3 cups (450 g) vegetable oil for deep frying
- 1/2 cup (120 ml) kecap manis or sweet soy sauce
- 2 tbsp (30 ml) sambal oelek or chili paste
- 2 tbsp (30 ml) rice vinegar or tamarind water
- 1 tbsp (15 ml) sugar
- 1 cup (150 g) bean sprouts
- 1 cucumber, thinly sliced
- 1/3 cup (40 g) roasted peanuts, coarsely crushed
- 2 cloves garlic, minced
- Salt to taste

Instructions

1. Heat oil to 350°F (175°C). Deep-fry tofu cubes in batches until evenly golden and crisp; drain on paper towels.
2. For the sauce, combine kecap manis, sambal, rice vinegar, sugar, and minced garlic in a small saucepan; warm through until slightly thickened and combined.
3. Arrange fried tofu with bean sprouts and cucumber on a serving platter, drizzle or spoon sauce over the tofu, and finish with crushed peanuts. Serve immediately.
