Ingredients

- 3.5 lb (1.6 kg) beef chuck roast, cut into 3-4 large chunks
- 2 tbsp (30 ml) vegetable oil
- 2 tbsp (30 g) kosher salt, divided
- 1 tsp (5 g) freshly ground black pepper
- 4 dried guajillo chiles, stems and seeds removed
- 3 dried ancho chiles, stems and seeds removed
- 2 dried morita chiles (smoked), stems and seeds removed
- 2 roma tomatoes, halved, approx. 8 oz (225 g) total
- 1 medium white onion, quartered
- 6 garlic cloves
- 2 tbsp (30 ml) apple cider vinegar
- 1 cup (240 ml) beef stock
- 12 oz (355 ml) Mexican lager (optional; can substitute additional beef stock)
- 1 tsp (2 g) ground cumin
- 1 tsp (1 g) dried Mexican oregano (or Mexican-style oregano)
- 3 whole cloves
- 2 bay leaves
- 1-2 cups (240-480 ml) water or reserved chile soaking liquid, as needed
- 1/2 tsp (2 g) ground cinnamon (optional, Baja touch)
- 1 cup (240 ml) consommé reserved for serving (from braise)
- 1 1/2 cups (300 g) long-grain white rice, uncooked
- 3 cups (720 ml) water (for rice)
- 1 tbsp (15 ml) vegetable or canola oil (for rice)
- 1 can (16 oz / 454 g) refried beans, warmed
- 12 corn tortillas (approx. 6-inch), warmed
- 1 medium red onion, thinly sliced (for quick pickling)
- 1/2 cup (120 ml) white vinegar (for pickling)
- 1/2 cup (120 ml) water (for pickling)
- 1 tbsp (12 g) sugar (for pickling)
- 1 tsp (6 g) salt (for pickling)
- 1 small white onion, finely diced (for garnish)
- 1 bunch cilantro, chopped (about 1 cup / 30 g)
- 3 limes, cut into wedges

Instructions

Short Description:
Slow-braised Baja-style beef birria marinated in a blend of toasted local dried chiles and spices, served with warm corn tortillas, cilantro-onion, pickled red onion, steamed rice and refried beans for a complete main-course meal.

Regional Notes:
This Baja California version uses beef (res) instead of the traditional goat and often incorporates smoked chiles or morita and a splash of Mexican lager in the braising liquid. The result is a richer, slightly smoky birria suited to Northern Mexico tastes and local beef availability.

1. Make the quick pickled onions: place sliced red onion in a jar, add 1/2 cup (120 ml) white vinegar, 1/2 cup (120 ml) water, 1 tbsp (12 g) sugar and 1 tsp (6 g) salt; shake and set aside at room temperature while you prepare the birria (at least 20 minutes).
2. Toast chiles briefly: heat a dry skillet over medium heat and toast each dried chile 10–20 seconds per side until aromatic but not burned; remove to a bowl, cover with hot water and soak 20 minutes until pliable. Reserve soaking liquid.
3. Prepare chile-adobo sauce: in a blender, combine soaked chiles (drained but reserve 1/2 cup /120 ml soaking liquid), roasted tomatoes, quartered white onion, garlic cloves, 2 tbsp (30 ml) apple cider vinegar, 1 cup (240 ml) beef stock, 12 oz (355 ml) Mexican lager (or additional stock), 1 tsp (2 g) ground cumin, 1 tsp (1 g) oregano, 3 whole cloves, 1/2 tsp (2 g) ground cinnamon (optional), and 1–2 cups (240–480 ml) of reserved chile soaking liquid or plain water as needed to blend into a smooth, pourable sauce. Strain the sauce through a fine-mesh sieve into a bowl, pressing solids to extract flavor; discard solids.
4. Season and sear beef: pat beef dry, rub with 1 tbsp (15 g) kosher salt and 1/2 tsp (1 g) black pepper. Heat 2 tbsp (30 ml) vegetable oil in a large Dutch oven over medium-high heat. Sear beef chunks on all sides until browned, about 3–4 minutes per side; remove and set aside.
5. Assemble for braise: reduce heat to medium, pour the strained chile-adobo into the Dutch oven, scrape up any browned bits, then return beef to the pot. Add 1 cup (240 ml) beef stock, 2 bay leaves, remaining 1 tbsp (15 g) kosher salt, and bring to a simmer.
6. Braise low and slow: cover Dutch oven and place in a preheated oven at 325°F (160°C). Braise until meat is fork-tender, about 3 to 3.5 hours. Alternatively, simmer gently on the stovetop over low heat, covered, for the same time.
7. Prepare rice while meat braises: rinse 1 1/2 cups (300 g) rice until water runs clear. In a medium saucepan heat 1 tbsp (15 ml) oil over medium heat, sauté rice 2 minutes, add 3 cups (720 ml) water and 1/2 tsp salt, bring to a boil, reduce to low, cover and cook 15–18 minutes until water is absorbed. Fluff with a fork and keep warm.
8. Remove and shred beef: when meat is tender, transfer beef to a cutting board, let cool slightly, shred into large pieces and discard any excess fat or bones. Strain the braising liquid (consommé) into a bowl; skim fat from top and reserve 1 cup (240 ml) consommé for serving and the rest for thinning the meat or reducing.
9. Reduce and finish consommé (optional): if you want a concentrated dipping consommé, pour strained liquid back into the Dutch oven, bring to a simmer and reduce 10–15 minutes until slightly thickened. Taste and adjust salt.
10. Recombine beef with sauce: return shredded beef to the pot with enough consommé to moisten (about 1–2 cups /240–480 ml), simmer 5–10 minutes so the meat absorbs the braise and warms through.
11. Warm tortillas and beans: heat corn tortillas on a dry skillet until pliable and lightly browned. Warm refried beans in a small saucepan over low heat.
12. Plate and serve: for each serving, place 1/4 cup (60 g) warm refried beans and 3/4 cup (about 150–200 g) cooked rice on the plate, heap 1 cup (about 160–200 g) birria (shredded beef with sauce) beside them, and offer 2 warm corn tortillas. Serve with a small bowl of consommé for dipping. Garnish birria with diced white onion, chopped cilantro and pickled red onions; serve lime wedges on the side.
13. Optional taco method: for birria tacos, dip a tortilla lightly in the consommé, fill with shredded beef and fold; sear briefly in a skillet until crisp and serve with consommé for dipping, pickled onions, cilantro and lime wedges.
