Ingredients

- 2 1/2 cups (312 g) all-purpose flour
- 1 tsp (5 g) salt
- 1 tbsp (12 g) granulated sugar
- 1 cup (8 oz) (226 g) unsalted butter, very cold, cut into 1/2-inch cubes
- 6-8 tbsp (90-120 ml) ice water
- 6 medium Granny Smith apples, peeled, cored, and sliced, approx. 2 lb (900 g) total
- 3/4 cup (150 g) granulated sugar
- 1/4 cup (50 g) packed light brown sugar
- 3 tbsp (24 g) all-purpose flour
- 1 tsp (2.6 g) ground cinnamon
- 1/4 tsp (0.6 g) ground nutmeg
- 1 tbsp (15 ml) fresh lemon juice
- 1/4 tsp (1.5 g) fine salt
- 2 tbsp (28 g) unsalted butter, cut into small pieces (for dotting filling)
- 1 large egg, approx. 1.75 oz (50 g) total (for egg wash)
- 1 tbsp (15 ml) water (for egg wash)

Instructions

1. Step 1: In a large bowl whisk together flour, salt, and sugar. Cut in cold butter with a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized pieces.
2. Step 2: Sprinkle ice water, 1 tbsp at a time, and gently mix until dough just holds together. Divide into two disks, wrap, and chill at least 1 hour.
3. Step 3: Meanwhile, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and salt in a large bowl; let sit 15 minutes.
4. Step 4: Preheat oven to 425°F (220°C). Roll one dough disk on a lightly floured surface to a 12-inch (30 cm) circle and fit into a 9-inch (23 cm) pie plate.
5. Step 5: Mound apple filling into crust, dot with 2 tbsp butter pieces, and roll out second disk to cover. Trim and crimp edges; cut vents in top crust.
6. Step 6: Beat egg with 1 tbsp water and brush over top crust. Optionally sprinkle a little sugar over top.
7. Step 7: Bake at 425°F (220°C) for 20 minutes, then reduce oven to 375°F (190°C) and bake an additional 35–45 minutes until filling is bubbling and crust is golden; cover edges with foil if browning too fast.
8. Step 8: Cool at least 2 hours before slicing to let filling set; serve warm or at room temperature.
